Ham & Spinach Egg Bites

These egg bites are a quick and easy breakfast staple here in our home. My 11 month old has been eating them since she was about 10 months old and she tears them up! It’s a great way for her to get her protein and veggies all in one. I serve these with her favorite fruit on the side. You can also substitute the ham for your choice of protein.

All you need is:

Fresh spinach, chopped

5-6 slices of ham, torn up 

4 eggs

Salt to taste

Pepper to taste

Pam or your choice of non-stick spray

Muffin pan

Instructions

  1. Preheat oven to 375 Degrees F
  2. Spray muffin pan with non-stick spray
  3. Chop or tear up spinach and add to muffin pan
  4. Tear up your ham into small pieces and place in muffin pan
  5. Whisk 4 eggs with salt and pepper 
  6. Pour whisked eggs into the muffin pan
  7. Bake in oven for 20-22 minutes until golden brown 
  8. Serve once chilled 

These Ham & Spinach bites are a quick and easy breakfast recipe for your little one and even you too! Hey, why not? They can be stored in the fridge for 2-3 days and warmed up for about 15-20 seconds!
