Broccoli and Cheddar Bites

These broccoli and cheddar bites are so quick to make and easy to clean up that they’ll be a staple in your little ones diet after just one try. I initially made these because my baby was refusing to eat her veggies when we first started our baby led weaning journey. So I did what any parent would do, I tricked her into eating her veggies and now she loves them!

For this quick 6 ingredient recipe all you need is:

½ bag of frozen broccoli finely chopped

¼ Onion

½ cup of cheddar or Mexican blend cheese

1 Egg

½ cup of bread crumbs 

¼ tsp of garlic powder

Instructions

  1. Preheat oven to 375 Degrees F
  2. Chop up onion and broccoli finely (can throw in the blender)
  3. Add cheese, egg, bread crumbs and garlic powder to the onion and broccoli in a bowl
  4. Combine and mix well. If the combination looks too dry, add another egg then add more bread crumbs until it becomes packable
  5. Grease muffin pan and then pack the mixture in 
  6. Put in oven for 20-25 minutes until golden brown and then let cool before serving

These bites are great for breakfast, a snack or on the go. They can be stored in the fridge for up to 3 days and are freezer friendly!
