These broccoli and cheddar bites are so quick to make and easy to clean up that they’ll be a staple in your little ones diet after just one try. I initially made these because my baby was refusing to eat her veggies when we first started our baby led weaning journey. So I did what any parent would do, I tricked her into eating her veggies and now she loves them!

For this quick 6 ingredient recipe all you need is:
½ bag of frozen broccoli finely chopped
¼ Onion
½ cup of cheddar or Mexican blend cheese
1 Egg
½ cup of bread crumbs
¼ tsp of garlic powder
Instructions
- Preheat oven to 375 Degrees F
- Chop up onion and broccoli finely (can throw in the blender)
- Add cheese, egg, bread crumbs and garlic powder to the onion and broccoli in a bowl
- Combine and mix well. If the combination looks too dry, add another egg then add more bread crumbs until it becomes packable
- Grease muffin pan and then pack the mixture in
- Put in oven for 20-25 minutes until golden brown and then let cool before serving
These bites are great for breakfast, a snack or on the go. They can be stored in the fridge for up to 3 days and are freezer friendly!
